Tomorrow will be the first Thanksgiving since I launched Tech for Luddites a little less than a year ago. I'd like to take this occasion to express my sincere gratitude to all of you who have visited since then, left comments, asked questions, and shared your own tips. I really appreciate your support and I hope you'll continue to drop by as I have some exciting plans for the site that I'll be announcing in the new year.
In the meantime, I wish all my readers and their families a Happy Thanksgiving and the start of a wonderful holiday season. I have no tech tips this time, but in the spirit of the season I'm including a decidedly Luddite-friendly recipe I recently developed for a class I'm taking. Cheers!
Lemon Prosecco Ice
In a season filled with cookies, cakes, and pies, this festive dessert is a light and refreshing alternative to finish off your holiday meal. So go ahead—have that second scoop of stuffing!
Ingredients:
1 C. water
½ C. granulated sugar
½ C. lemon juice (fresh or concentrated)
1 C. Prosecco, champagne, or other sparkling wine
Fresh raspberries and mint leaves for garnish
Instructions:
Pour the water in a microwave-safe bowl and stir in the sugar. Microwave on high for 20-30 seconds until the sugar is completely dissolved. Place the mixture in the fridge to cool.
When ready, add in the lemon juice and Prosecco. Stir well.
Pour the mixture into a freezer-safe container and freeze for 4-5 hours. Every hour or so, stir the mixture to break up the ice, creating a snow-like texture.
To serve:
Dip champagne flutes in lemon juice and roll in sugar. Spoon the mixture into each glass, filling it to the top. Garnish with 2-3 raspberries and a sprig of mint.
Variations:
- Before adding the lemon juice, separate the liquid into two bowls and add ¼ C. of lemon juice to one and ¼ C. of cranberry juice to the other. Freeze both mixtures. Rim glasses with crushed candy canes and alternate layers of white and red ice. Garnish with a peppermint stick.
- For a non-alcoholic version, replace the sparkling wine with sparkling cider or white grape juice.
- Instead of making dessert from the mixture, freeze it in ice cube trays and use the cubes to cool your party punch.
